每天计数：

select substr(`date`,1,10) as `day`,
       count(*) cnt 
  from table_name 
 group by substr(`date`,1,10);

每月：

select substr(`date`,1,7) as `month`,
       count(*) cnt 
  from table_name 
 group by substr(`date`,1,7);
